Chickpea and Olive salad

SALAD RECIPES

Ingredients:

  1. 2 cups cooked chickpeas

  2. 1 cucumber, seeds scooped out and cut intp medium sized pieces

  3. 2 tomatoes, de seeded and cut into the medium cubes

  4. 1 onion finely chopped

  5. 3 tbsp chopped parsley

  6. ½ cup pitted black olives

  7. Salt to taste

  8. Pepper

Dressing:

  1. 1 tbsp lemon juice

  2. 2 tbsp olive oil

  3. 2 garlic cloves crushed

  4. ⅛ tbsp stevia powder

Instructions:

  1. In a bowl, mix chickpeas, chopped cucumber and chopped tomatoes, olives, onion, parsley, stevia powder, salt and pepper.

  2. Put all the dressing ingredients in a small jar and shake well.

  3. Pour over the salad and toss lightly to combine.

  4. Serve fresh.
