Chickpea and Olive salad

Ingredients:
2 cups cooked chickpeas
1 cucumber, seeds scooped out and cut intp medium sized pieces
2 tomatoes, de seeded and cut into the medium cubes
1 onion finely chopped
3 tbsp chopped parsley
½ cup pitted black olives
Salt to taste
Pepper
Dressing:
1 tbsp lemon juice
2 tbsp olive oil
2 garlic cloves crushed
⅛ tbsp stevia powder
Instructions:
In a bowl, mix chickpeas, chopped cucumber and chopped tomatoes, olives, onion, parsley, stevia powder, salt and pepper.
Put all the dressing ingredients in a small jar and shake well.
Pour over the salad and toss lightly to combine.
Serve fresh.
