Ingredients:
½ cup broken wheat (Daliya) / quinoa
½ tsp oil for cooking
Salt to taste
1 cup cucumber halves
1 cup chopped tomatoes
1 cup blanched broccoli florets
1 cup sliced and blacked mushroom
1 cup lettuce, torn into small pieces
¼ cup finely chopped mint leaves
1 ½ tbsp lemon juice
Freshly grounded black pepper to taste.
Instructions:
Boil enough water in a deep non-stick pan, add the salt and oil and mix well.
Add the broken wheat/qunioa, mix well and cook on a medium flame for 7 minutes.
Drain well with cold water.
Combine all the ingredients along with the cooked broken wheat in a deep bowl and toss well.
Serve immediately.
