Spicy Black Bean Vegetable Soup

WINTER SPECIAL

Ingredients:

  1. 1 tbsp vegetable oil

  2. 1 onion-chopped

  3. 1 clove garlic minced

  4. 2 tsp chilli powder

  5. 1 tsp ground cumin

  6. 1 cup cooked black bean or kidney beans

  7. 1 carrot chopped

Instructions:

  1. In a large saucepan, heat oil over medium heat.

  2. Cook onion, garlic and carrots; stirring occasionally for 5 minutes or until onion is softened.

  3. Add chilli powder and cumin, cook and stir for 1 minute.

  4. Add stock, ½ cup of the beans and pepper, bring to boil.

  5. In a blender, puree together tomatoes and remaining beans; and add to the pot.

  6. Reduce heat, cover and simmer for 10 to 15 mins or until carrots are tender.

Sautéed onions, garlic, and carrots meld with the bold flavors of chili powder and cumin, creating a tantalizing base. Enriched with protein-packed black beans, this soup is simmered to perfection, delivering a wholesome and satisfying bowl bursting with savory goodness.
